Ingredients
British fruit, sustainable botanicals
Handmade with British fruit, brought together with botanicals sourced for provenance, traceability and a fair price.
Wild harvested
Wherever possible our ingredients grow naturally in the wild and are handpicked from their native ecosystems, responsibly gathered to protect the landscapes they come from.
Organic
Organic ingredients give the cleanest taste of each botanical, free of any nasties.
A fair price
Ethical and not price led. Provenance, traceability and a fair price, which means a fair wage, are at the heart of how we source.

Kent
Gooseberry
Delicate and notoriously stubborn, so capturing its character took a great deal of experimentation. Much of our fruit is sourced through a strawberry farmer in Kent, who trades her strawberries with neighbouring farms that grow the fruits we use.
-

Herefordshire, Yorkshire and Kent
Rhubarb
Handpicked from farms across three corners of England. We use a spread of farms so typically English, inclement weather never decides a batch. Our rhubarb is Red Tractor certified.
-

Queyras National Park, French Alps
Gentian
A sustainably grown, protected species, wild harvested under licence in the Queyras National Park in the south east of France.
-

Ecuador
The fever tree
The cinchona tree is native to the eastern slopes of the Andes. Ours is wild harvested in Ecuador. The quinine that comes from cinchona is the key ingredient in tonic water.
-

Gabon
Red sandalwood
Wild harvested in Gabon, on the Atlantic coast of Central Africa. It is slow to grow, so it is limited in availability.
-

Calabria, Italy
Organic bergamot oil
Our citrus note comes from the hills of Calabria in southern Italy. The fruit is still collected by hand so the peel is not bruised into releasing its oil too early. Locals call the filtered oil the liquid gold of Calabria.
-

Florence, Italy
Orris root
The root of the iris flower, and the foundation that lets all the others be at their best. Tim's grandmother was called Iris, and she played the same role in his life.
-

Britain and Albania
Elderflower and wormwood
British elderflower blossom is always a sign that summer is on the way. We clean and dry it, then steep it for four days. Wormwood doesn't grow in the UK, so ours is wild harvested under licence in Albania by local villagers, near Gramsh and Lenie in Elbasan county.
-

Lime tree blossom
Linden flower
Harvested from the lime or basswood tree, linden flowers are celebrated for their delicate floral scent and are usually brewed into a soothing herbal tea.

The base
Our spirit
We use grain spirit as our base, much like most British gins, because its neutral flavour lets our eccentric botanicals show their flavours unhindered.
